Creamy "Cheddar" + Broccoli Soup

Here we are 2019, I can’t believe you’re already here. This year I’m not setting resolutions… I’m setting goals and intentions. I believe that resolutions are just things we say we want to do but never really pursue them. Setting goals to me is about setting a date and time that I want to achieve something, it’s the things I actually intend acting on. Additionally, if I am being honest (as I always am) I never put an immense amount of stress on myself to achieve them, because some things take longer than others to accomplish or are always being worked on.

In 2018 I made some incredible memories, we travelled to California, Italy, France, Spain, and almost England (you know what I’m talking about), met some incredible people through this community, ate some amazing food, became more mindful of listening to my body and my mind, slowly starting to learn how to say “no,” learning that some people might not support you but let that fuel a fire to do good, and ultimately kindness and happiness is up to you. There’s not a certain formula or medicine that you can take to make yourself happy in this life. Your life is up to you ultimately. I also learned that sometimes you have to speak your mind to not put up with bullsh*t, as much as it is important to be kind to others it’s also ok to kindly express how you are feeling when others let you down or treat you poorly. You can’t let people walk over you! I open 2019 with open arms and can’t wait for another year to work on myself and see what I learn in 2019. What are you looking forward to this year?

Ok, now on to the soup; ultimate cozy food. This creamy and “cheesy” broccoli soup is the best way for me to kick off the New Year because we’ve been experiencing low temps and lots of snow. It’s so frigid out there I might just call it a day and make soup for every meal because I deem it the only acceptable meal. I paired it with brown rice, nutritional yeast, almond milk, lots of broccoli (obvs), and it’s pretty much the dream one pot meal! Happy New Year, wishing you the best things to come!

Creamy “Cheddar” + Broccoli Soup

Serves: 4

  • 1 Tbsp olive oil

  • 1 yellow sweet onion (diced)

  • 2 cloves of garlic (minced)

  • 1/4 cup gluten-free all purpose flour

  • 1 1/2 cup unsweetened plain almond milk

  • 1/4 cup nutritional yeast

  • 3 cups vegetable stock

  • 1 head of broccoli (cut into florets)

  • 2 medium carrots (sliced into discs)

  • 3 stalks of celery (diced)

  • 1/2 cup brown rice (rinsed)

  • salt + pepper for taste

Method: In a dutch oven over medium heat add the olive oil, onion, and garlic, sautee until soft. Add 3 Tbsp of water to the pot along with the flour, mixing vigorously. Slowly add the almond milk 1/4 cup at a time, mixing as you do. Add the stock in along with the nutritional yeast. Simmer for 15-20 minutes; mixing often. Add the broccoli florets in, carrot, celery, rinsed brown rice, along with the salt and pepper. Cook for 20-30 minutes or until the rice has cooked through. Enjoy :)
