Sweet Potato + Cinnamon Crumb Casserole

Full disclosure, the word casserole kind of reminds me of going to my grandmothers house for a Sunday dinner, but I swear this is an upgraded version. I make this casserole every Christmas and Thanksgiving, and it’s something I look forward to every year.

This year I’m put on duty to cook all the veggies, because traditionally in Newfoundland Thanksgiving and/or Christmas dinner consist of boiling all of your veggies together (think potato, turnip, carrot, etc.) in the same pots and serving them as boiled veggie… personally it doesn’t get me too excited for eating vegetables. So I have a whole bunch of recipes lined up, from a nut roast to roasted butternut squash and everything in between… the list is quickly getting long. Also I forgot to mention that I am usually the one on dessert duty too, meaning more than one pie/option will be seen at our family feast.

This time of the year however can bring up some challenges for some wether that’s from loneliness or anything else that others might be facing behind closed doors. Although we should be grateful for everything we our privileged to have all year long, Thanksgiving really makes me reevaluate just how lucky I am to have a strong support system, a roof over my head, a family, and a lovely community of likeminded supportive individuals.

Before Thanksgiving this year I’ve decided to fill little bags with self-care products, gift cards to Tim Horton’s, lots of snacks, gloves, and little uplifting notes for the homeless. They are so easy to do and can be relatively inexpensive depending on where you go to purchase your supplies. My list for my care packages will include the following: toothbrushes, toothpaste, deodorant, chapstick (with SPF), energy bars, nut butter, ear plugs, gloves, more snacks, and notes. If you have any additional ideas as to what I should include please tell me in the comments section, it’s so greatly appreciated!

Sweet Potato + Cinnamon Crumb Casserole

Serves: 4-6

  • 2 large sweet potatoes (or 4 regular)

  • 3 Tbsp coconut oil

  • 3 Tbsp maple syrup

  • 1/4 cup unsweetend almond milk

  • 1 tsp cinnamon

  • 3/4 tsp allspice

Crumb Topping:

  • 1 1/2 cup rolled oats

  • 1 cup pecans

  • 1/2 cup walnuts (or sub pecans)

  • 3 tbsp coconut oil

  • 3 tbsp maple syrup

  • 1 tsp cinnamon

Method: Preheat the oven to 400F. Peel and cut the sweet potato into chunks. Steam in a steam basket until slightly soft and cooked through. Mash in the pot using a potato masher, and add in the coconut oil, maple, almond milk, cinnamon, and allspice until combined. Add to a casserole dish and smooth over using a spatula. Make the crumb by adding the oats, nuts, coconut oil, maple, and cinnamon to a food processor until broken down and combined into a crumb mix. Evenly distribute the crumb on top of the sweet potato mixture and bake for 15 minutes. Serve as a side and use leftovers for breakfast with an extra drizzle of maple.
