Fluffy Banana Cornmeal Pancakes

Makes: 10

  • 1 tsp coconut oil

  • 1 ripe banana (mashed)

  • 2/3 cup plant milk

  • 1/2 cup cornmeal

  • 1/3 cup + 1 Tbsp corn flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp sea salt

Method: In a mediu bowl mash the banana, and add the plant milk. Whisk until combined. Fold in the cornmeal, flour, baking powder, cinnamon, and sea salt. In a skillet over medium heat, melt the coconut oil and dollop 1-2 Tbsp worth of batter to form the pancakes. Flip the pancakes once bubbles form. Makes approximately 10.
