Elevated Banana Bread: Whole Wheat Caramelized Coconut Banana Bread

There's nothing like a good ol' thick slice of banana bread paired with a nice tall glass of almond milk to elevate your mood. Growing up my aunt's sister would bake these decadent loaves of banana bread which she would give us for the holiday's or as a "just because" gift.

When I would get home at the end of the day of school, no matter how bad that day could've been I would whip out a slice of the banana bread from the freezer, pop it in the microwave, lather it in butter (I didn't eat plant-based back then), and sit myself at the table with a tall glass of cold milk. This ritual immediately elevated my mood, and it still does to this day; however, now my loaves are vegan now which are accompanied by almond milk!

The addition of caramelizing the banana before adding it to the other ingredients is also sure to elevate your mood even more (well at least in my opinion), the sweet smell of maple, bananas, and cinnamon will make your house smell insanely good!

I recommend that you book it into your kitchen, bake up this loaf, let it cool, and smear some nut butter on top! I hope you enjoy!

Elevated Banana Bread: Wholewheat Caramelized Coconut Banana Bread 

INGREDIENTS

  • 2 tsp Coconut oil
  • 2 tsp Maple Syrup
  • 4 Spotty Ripe Bananas
  • 1/2 tsp Cinnamon
  • 1 3/4 Cups Sprouted Whole Wheat Flour You can just use regular whole wheat too!
  • 4 tsp Baking powder
  • 1/2 tsp Sea Salt
  • 1 tsp Cinnamon
  • 1/2 Cup Unsweetened Almond Milk
  • 4 Tbsp Maple Syrup
  • 1/2 tsp Vanilla Extract
  • 3 Tbsp Melted Coconut Oil
  • 4 Pitted Medjool Dates (chopped into small pieces)
  • 1/2 Cup Chopped Dark Chocolate Bar (optional)
  • 1/3 Cup Flaked Coconut (to top)
  • 1/4 Cup Chopped pecans/walnuts (to top)

INSTRUCTIONS

1. Preheat the oven to 350F (180C)

2. Peel and cut up the four ripe bananas into discs. 

3. In a frying pan over medium heat add the 2 tsp of coconut oil with 2 tsp maple syrup. Coating the pan in the mixture. 

4. Add the bananas to the frying pan along with 1/2 tsp cinnamon, fry them off until brown and gooey (about 5-10 minutes). 

5. Allow the bananas to cool for about 20-30 minutes. 

6. In the meantime mix together the flour, baking powder, sea salt, and 1 tsp of cinnamon. 

7. In a second mixing bowl add the bananas and mash, vanilla extract, almond milk, and coconut oil. 

8. Fold the dry ingredients into the wet and mix until well combined. 

9. Fold in the dates and chopped chocolate in. 

10. In an oiled loaf tin add the batter and top with coconut flakes, nuts, and chocolate. 

11. Bake for 50-55 minutes and check to make sure they are baked through using a knife.
