Vegan Quiche

One thing I definitely used to love having on Christmas morning was quiche, paired with warm pastries, orange juice, and topping the meal with chocolate. Although it’s not Christmas time something about all the spring produce has me longing for a piece of quiche.

This one is 100% vegan, gluten-free, easy, and pairs nicely with a salad, or some mixed veg. You can totally use a pie crust, sweet potato crust, etc if you want to add a crust with yours! I’ve been pairing mine with a light salad for a quick lunch or dinner. You totally can’t go wrong with it :)

Vegan Quiche

1 block organic firm tofu

1/2 cup unsweetened almond milk

1/4 cup water

1 tsp turmeric

1 tsp onion powder

1 tsp cumin

1/2 tsp sea salt

1/2 tsp black pepper

1/2 tsp kala namak salt (optional but gives egg taste)

2 shallots (diced)

2 cloves garlic (minced)

1 cup chopped asparagus

1 cup corn kernels

Method:

Preheat the oven to 350 F. In a skillet add some oil and fry off the shallots, garlic, asparagus, and corn. In an upright blender add the tofu, almond milk, water, and seasonings. Blend until smooth. In a bowl add the egg mixture and fold in the veg. Pour the mixture into a greased skillet, and bake for 40-45 minutes. Allow to cool and cut into 6 slices.
