Black Bean + Quinoa Veggie Burgers

A very happy long weekending to all my Canadian friends! It’s full on bbq season around here, and that means lots of burgers, salads, etc, etc. These are super easy to freeze up if you’re not a huge friend of frozen burgers, and you won’t be missing out on the whole burger season :)

One of the most transformational podcasts I have ever had the honour of listening too. This one really gives you that gentle reminder that wherever you are in life, you are capable of creating your future and the life you want to live (not to sound cliche or anything). Ok, now on to the actual recipe and I hope you enjoy! :)

Black Bean + Quinoa Veggie Burgers

  • 1/2 cup quinoa

  • 1/2 red onion (diced)

  • 1/2 cup cremini mushrooms (diced)

  • 2 cloves garlic (minced)

  • 1 can black beans (rinsed + drained)

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • 1/2 cup rolled oats

  • 1/2 tsp pepper

  • 1/2 tsp sea salt

Method:

Cook 1/2 cup of quinoa according to the instructions on the back. Allow to cool. In a saucepan fry off the onion, garlic, + mushrooms until cooked through. Allow to cool. Once the veggies and quinoa have cooled add all the ingredients to a food processor. Pulse until well combined. Roll the ‘meat’ into balls with about 3 Tbsp worth slightly flatten on a lined baking tray and repeat until used up. Cool for 20-30 minutes. Preheat the oven to 375 F. On a greased pan fry the patties on each side for 2-3 minutes. Remove from pan and bake for 20 minutes, flipping halfway in between. Serve on a burger bun, lettuce, etc., etc.
