Raw Chocolate Peanut Candy Bars

I honestly don’t know when the last time I had a candy bar from the gas station was. I mean they aren’t plant-based and they contain a ton of ingredients I can’t even pronounce so I’d say it’s been a good half a decade or more. These are made with minimal plant-based ingredients, and you can whip them up in under an hour.

If you want thic bars I recommend using an 8 x 8 baking tray, however if you want thinner bars use a 9 x 9. If allergic to peanuts you can totally use almond butter, cashew, or any other nut/seed butter you have on hand. Just make sure that they contain one or two ingredients ie. peanuts and salt.

Raw Chocolate Peanut Candy Bars

Makes: 8 bars

First Layer:

  • 1/2 cup rolled oats

  • 1/2 cup almond flour

  • 1/2 cup coconut flour

  • 1/2 cup finely shredded coconut

  • 6 medjool dates (pitted)

  • 1/4 cup maple syrup

  • 2 Tbsp coconut butter (melted)

Method: Line an 8 x 8 (or 9 x 9) baking dish with parchment paper. In a food processor add the oats in and blitz to form a fine flour. Add in the other flours along with the dates, maple syrup, and melted coconut butter. Blitz until it comes together and starts to form a dough. Set in the freezer for 20 minutes while you make the filling.

Second layer:

  • 1 cup creamy natural peanut butter

  • 10 pitted medjool dates

  • 1/4 cup peanut butter

  • 1/4 cup almond milk

  • 1/4 cup peanuts (chopped)

Method: In a food processor add all the ingredients and pulse until a smooth creamy consistency forms, add extra almond milk if needed. Remove the base from the freezer. Evenly spread the peanut butter mixture on top, add the crushed peanuts on top. Place back in freezer for 20-25 minutes.

Top layer:

  • 1 bag dairy-free chocolate chips (I use Enjoy Life)

  • 1/4 cup peanuts (optional)

  • 1 Tbsp flaked sea salt (optional)

Method: In a double boiler, add the chocolate chips and slowly melt. Remove the bars from the freezer, and evenly spread chocolate over. Top with peanuts and sea salt. Place back in freezer to set for 15-20 minutes. Remove from freezer and cut into 8 bars. Store in the freezer/fridge and enjoy!
